Para ello se han optimizado las metodolog\u00edas necesarias. Se ha efectuado un seguimiento de la evoluci\u00f3n de dichos par\u00e1metros en alcachofa fresca, a lo largo del periodo de producci\u00f3n, a fin de conocer la repercusi\u00f3n sobre los mismos de las distintas condiciones climatol\u00f3gicas sufridas por las plantas; encontr\u00e1ndose incrementos en las actividades ppo y pod y mayores contenidos en inulina en los periodos m\u00e1s fr\u00edos. Por \u00faltimo, en la factor\u00eda, se ha continuado con el estudio del contenido en carbohidratos, realiz\u00e1ndose seguimientos a lo largo del proceso de fabricaci\u00f3n y durante el almacenamiento, con objeto de conocer cuales son las causas que provocan la precipitaci\u00f3n del polisac\u00e1rido inulina en los elaborados; circunstancias que provoca importantes mermas en la
