Se trataba de estudiar la influencia de la estructura del flavanol y la de sus unidades constitutivas sobre las reacciones que se produc\u00edan, en presencia y ausencia de 3-monogluc\u00f3sido de malvidina y acetaldeh\u00eddo, y evaluar la capacidad de los distintos flavanoles como copigmentos del antociano. Tanto en presencia como en ausencia del antociano, las disoluciones de flavanoles sufren un pardeamiento, diferente en funci\u00f3n del flavanol, con formaci\u00f3n de nuevos pigmentos, con caracter\u00edsticas espectrales id\u00e9nticas, independientemente de que provengan directamente del flavanol o resulten de su reacci\u00f3n con el antociano (o productos de su degradaci\u00f3n). Los flavanoles muestran diferente eficacia como copigmentos del 3-monogluc\u00f3sido de malvidina. Como resultado de las reacciones de condensaci\u00f3n directa entre flavanoles y antocianos se forman d\u00edmeros incoloros. En presencia de acetaldeh\u00eddo, se producen condensaciones a trav\u00e9s de puentes etilo de los flavanoles solos o con el antociano, que compiten con las de pardeamiento.
