Jose <\/strong><\/h2>\n<p>Las aplicaciones de las lectinas son multiples pero, sin embargo, es dificil encontrar investigaciones actuales en las que el objetivo del estudio sea esta proteina. Por otra parte, estudios anteriores referidos a la estabilidad de la proteina son escasos y contradictorios.  en esta tesis se ha pretendido realizar un estudio sobre la estabilidad de la lectina de lens culinaris y conocer su comportamiento termodinamico en condiciones experimentales diversas, asi, se indujeron variaciones en el ph tanto acidas como basicas; se simultanearon los efectos termico, y acido que determinaron cambios estructurales que logicamente, implican una disposicion distinta de los aminoacidos.  para llevar a cabo este estudio y hacer un seguimiento de los procesos de plegamiento en entornos distintos, se utilizaron metodos termicos como la microcalorimetria diferencial de barrido que permite detectar algunas de las propiedades fisicas de la muestra de forma continua y a medida que se desnaturaliza con la temperatura. La espectroscopia de fluorescencia que permite detectar cambios en la posicion de los residuos de triptofano y, que se pueden relacionar con cambios en la estructura de la proteina sometida a condiciones experimentales diversas.
