Cerevisiae capaces de usar lactosa como fuente de c, con el fin de utilizarlas en procesos de fermentaci\u00f3n inustrial para el aprovechamiento biotecnologico del lactosuero. Este residuo del proceso de fabricaci\u00f3n de quesos es muy contaminante por el elevada cantidad de materia org\u00e1nica que contiene, principalmente en forma de lactosa. Su metabolizaci\u00f3n por s. Cerevisiae es interesante por las potenciales aplicaciones posteriores de esta levadura en el sector alimentario. As\u00ed, se ha introducido esta nueva capacidad en ella mediante la integraci\u00f3n estable en su genoma de los genes lac de k. Lactis, necesarios para la entrada e hidr\u00f3lisis del disac\u00e1rido a compuestos perfectamente metabolizables por s. Cerevisiae. Los estudios de expresi\u00f3n de los genes en distinta dosis y bajo control de distintos tipos de promotor han indicado que la eficacia de s. Cerevisiae para usar esta fuente de carbono es comparable a la de k. Lactis con ambos genes en copias m\u00faltiples y bajo control de un promotor inducible por galactosa.
