Al margen de funciones sobradamente conocidas, en los \u00faltimos a\u00f1os se han descrito para los carotenoides funciones preventivas en enfermedades degenerativas tan graves como las aterosclerosis o el c\u00e1ncer. Adem\u00e1s, cada d\u00eda son m\u00e1s utilizados en la industria como colorantes y como conservantes.  la trucha o. Mykiss requiere suplementaci\u00f3n con cetocarotenoides de s\u00edntesis en la piscifactor\u00eda para que el animal obtenga la coloraci\u00f3n id\u00f3nea para su comercializaci\u00f3n. Hemos observado que esta coloraci\u00f3n no depende de la capacidad de las lipoprote\u00ednas para unir cetocarotenoides.  por otra parte hemos caracterizado la ovoverdina, un carotenoprote\u00edna de h. Gammarus.
