El hmf es separado y cuantificado por mplc en fase inversa de otros compuestos acompa\u00f1antes, compuestos desconocidos x, y asi como del acido levulinico y furfural. Por otra parte se ha dise\u00f1ado y construido una planta piloto de calentamiento de leche en flujo continuo a nivel de laboratorio. Tambien se ha realizado un estudio cinetico de hmf (determinado por colorimetria y hplc), levulinico, furfural, compuestos desconocidos x e y, intermediarios fluorescentes, indice del agente clarificante, lisina biologicamente disponible y lactulosa en cruda entera y en simulados salinos de ultrafiltracion (smuf). Asi como durante la conservacion de leche unt.
