Rosa <\/strong><\/h2>\n<p>En el presente trabajo se ha realizado el aislamiento e identificaci\u00f3n bioqu\u00edmica de microorganismos pertenecientes al g\u00e9nero listeria, procedentes de canales de pollo y de diferentes puntos de la cadena de sacrificio de un matadero de aves. No se ha aislado listeria en ninguna muestra de canales y manipuladores hasta despu\u00e9s del eviscerado de las canales, encontrando diferencias significativas seg\u00fan si los pollos son eviscerados autom\u00e1tica o manualmente.
