Tomando en cuenta que espa\u00f1a es un pa\u00eds que produce industrialmente importantes cantidades de leche de oveja y cabra tambi\u00e9n se estudi\u00f3 la influencia de los tratamientos t\u00e9rmicos y la ultrafiltraci\u00f3n en el rendimiento quesero y en la sin\u00e9resis de cuajadas elaboradas a partir de las tres especies, dado que la presencia de grasa puede afectar a la aptitud tecnologica a la coagulaci\u00f3n, se estudi\u00f3 esta influencia en leche de vaca, cabra y oveja, en la primera fase de la coagulaci\u00f3n por acci\u00f3n del cuajo.
