Batsch) cultivadas en espa\u00f1a algunos aspectos de inter\u00e9s tecnol\u00f3gico y fisiol\u00f3gico de su maduraci\u00f3n postcosecha (calidad, p\u00e9rdidas, desarrollo f\u00fangico, deshidrataci\u00f3n, da\u00f1os por fr\u00edo y senescencia, respiraci\u00f3n, emisi\u00f3n de etileno) relacionados con nuevas tecnolog\u00edas de conservaci\u00f3n frigor\u00edfica.  los da\u00f1os por fr\u00edo (lanosidad, mal radiante, escladadura bajo la piel y textura v\u00edtrea) presentaron un desarrollo sigmoidal con mayor susceptibilidad en frutos menos maduros y en variedades como \u00abparaguayo\u00bb y \u00abmiraflores\u00bb en relaci\u00f3n a \u00absudanell\u00bb y \u00abperiana\u00bb. Los da\u00f1os por fr\u00edo fueron asociados a una p\u00e9rdida de firmeza de la pulpa, una excesiva p\u00e9rdida de acidez, valores altos de ph, relaciones entre s\u00f3lidos solubles y acidez anormalmente elevadas y disminuci\u00f3n excesiva del angulo hue. Tras la maduraci\u00f3n complementaria la incapacidad se ha asociado principalmente a falta de ablandamiento y bajos niveles de zumo extraible y jugosidad en relaci\u00f3n a la maduraci\u00f3n normal. Los da\u00f1os por fr\u00edo deterioran la emisi\u00f3n de etileno tanto en la conservaci\u00f3n (reducci\u00f3n) como tras la maduraci\u00f3n complementaria (estimulaci\u00f3n con da\u00f1os poco importantes y fuerte reducci\u00f3n con da\u00f1os graves).  en \u00abmiraflores\u00bb los da\u00f1os por fr\u00edo (a 0 grados c) se han relacionado con el deterioro de la actividad endopoligalacturonase y de la emisi\u00f3n de etileno en presencia de una actividad continua pectinmetilesterasa.  los calentamientos intermitentes de 1 d\u00eda por semana a 20 grados c fueron efectivos en aliviar los da\u00f1os por fr\u00edo y en mejorar la calidad en relaci\u00f3n a la conservaci\u00f3n convencional, aunque como factor limitante estar\u00e1 la p\u00e9rdida de firmeza y otros s\u00edntomas de senescencia.
