{"id":37138,"date":"1998-01-01T00:00:00","date_gmt":"1998-01-01T00:00:00","guid":{"rendered":"https:\/\/www.deberes.net\/tesis\/sin-categoria\/proceso-de-obtencion-del-aceite-de-la-palma-jessenia-batatua-de-la-region-del-pacifico-colombiano\/"},"modified":"1998-01-01T00:00:00","modified_gmt":"1998-01-01T00:00:00","slug":"proceso-de-obtencion-del-aceite-de-la-palma-jessenia-batatua-de-la-region-del-pacifico-colombiano","status":"publish","type":"post","link":"https:\/\/www.deberes.net\/tesis\/quimica\/proceso-de-obtencion-del-aceite-de-la-palma-jessenia-batatua-de-la-region-del-pacifico-colombiano\/","title":{"rendered":"Proceso de obtencion del aceite de la palma jessenia batatua, de la region del pacifico colombiano."},"content":{"rendered":"<h2>Tesis doctoral de <strong> Alicia Rios Hurtado <\/strong><\/h2>\n<p>En la investigaci\u00f3n, se estudi\u00f3 el fruto de la palma jessenia batatua, desde el punto de vista f\u00edsico y de su naturaleza microestructural, obteni\u00e9ndose informaci\u00f3n que permiti\u00f3 dise\u00f1ar condiciones de extracci\u00f3n a nivel de proceso, mediante los cuales se mejora la eficiencia del mismo, la calidad del producto final (el aceite) y se hacen aportes al conocimiento de la calidad fisicoqu\u00edmica, organol\u00e9ptica y nutricional del mismo.  el estudio microestructural del fruto, permiti\u00f3 establecer que el mayor contenido de c\u00e9lulas grasas, se encuentra en el mesocarpo, las cuales se caracterizan por estar encerradas y rodeadas por fibras de diversas formas, estructura que permiti\u00f3 proponer la reducci\u00f3n de tama\u00f1o del fruto mediante molenda para facilitar la salida del aceite.  en cuanto al rendimiento de la extracci\u00f3n se refiere, el m\u00e9todo de mayor eficiencia es el solvente (95%), seguido del mec\u00e1nico (79,67%) y por \u00faltimo el tradicional (36%).  la caracterizaci\u00f3n f\u00edsico-qu\u00edmica del aceite, permiti\u00f3 establecer la estabilidad del aceite a temperatura ambiente de la regi\u00f3n (28 g c en promedio), ya que presenta \u00edndices de acidez (0.58) y de per\u00f3xido (3.78) bajos; y es cien por ciento l\u00edquido a partir de 10 g c; lo cual demuestra las excelentes condiciones de la materia prima para ser utilizada en extracci\u00f3n de aceite comestible, y de \u00e9ste para ser conservado.  el \u00e1cido graso mayoritario en el aceite, es el \u00e1cido oleico en porcentajes comprendidos entre 81,50 y 82,50%, en este mismo sentido, el triglic\u00e9rido en mayor proporci\u00f3n es la triole\u00edna (43.30 y 45.80%).
