Durante la refrigeracion solo la firmeza fue discriminante, al bloquearse el ablandamiento a 3 y retrasarse a 7 c. Esta evolucion es independiente del etileno, y no tiene relacion estricta con hidrolasas de pared celular. El absorbedor disminuyo el adelantamiento del ablandamiento post-conservacion observado en todos los casos, pero influyo poco en otros parametros. Los aumentos en los polipeptidos de 29 y 14.4 kd y la disminucion en otro de 30kd observados a 20 c se bloquearon a 3 grados y se retrasaron a 7 c. El absorbedor aumento el retraso en el polipeptido de 14.4 kd, que parece tener un papel en la fase final de la maduracion, y cuya presencia a 20 grados c se adelanta por la conservacion previa.
