Las familias de compuestos analizados por cromatograf\u00eda de gases fueron: monoterpenos, \u00e9steres, acetatos, \u00e1cidos org\u00e1nicos, fenoles vol\u00e1tiles, alcoholes superiores y sulfuros pesados, de cuyas concentraciones se obtuvieron los \u00edndices arom\u00e1ticos para las castas mencionadas, poni\u00e9ndose de manifiesto peculiaridades varietales. Por acoplamiento cromatograf\u00eda de gases-espectrometr\u00eda de masas-olfatometr\u00eda se determin\u00f3 el perfil arom\u00e1tico de albari\u00f1o y se detectaron los dos is\u00f3meros del
