Carmen <\/strong><\/h2>\n<p>Los experimentos que comprende esta investigaci\u00f3n se programaron con el objeto de llegar a una mejor comprensi\u00f3n de la formaci\u00f3n y evoluci\u00f3n del color de los vinos tintos durante la conservaci\u00f3n y el envejecimiento.  se estudiaron los siguientes tipos de reacciones:  la evoluci\u00f3n de flavanos de distinto peso molecular con y sin acetaldeh\u00eddo; la reacci\u00f3n entre flavanos (mon\u00f3meros, olig\u00f3meros y pol\u00edmeros) con antocianos y con antocianos y acetaldeh\u00eddo, reacci\u00f3n que se revel\u00f3 de gran importancia en la evoluci\u00f3n del color. Se realiz\u00f3 un estudio comparativo de la reactividad de las distintas familias antoci\u00e1nicas frente a catequina y acetaldeh\u00eddo.
