En este trabajo se ha pretendido contemplar, la introducci\u00f3n de tecnolog\u00edas en el proceso de elaboraci\u00f3n del jerez, estudiando de forma global la estructura de interrelaci\u00f3n no solo en cuanto a las que tienen las diferentes fases entre s\u00ed, sino a las que imponen el entorno empresarial y social en la actualidad, concret\u00e1ndose en operaciones que permitan aplicar el avance tecnol\u00f3gico con mejores resultados. Dichos objetivos contemplan adem\u00e1s la sustituci\u00f3n de operaciones en discontinuo por operaciones en continuo con objeto de simplificar, linealizar, flexibilizar y dar mejor respuesta a la
