Enriqueta Fernandez Izquierdo <\/strong><\/h2>\n<p>La presente tesis tras una introducci\u00f3n sobre los antecedentes hist\u00f3ricos, elaboraci\u00f3n, consumo, y legislaci\u00f3n de las bebidas alcoh\u00f3licas envejecidas en barricas de roble y un pormenorizado estudio de la relaci\u00f3n de los compuestos extraibles de la madera y su posible incidencia como marcador del proceso de envejecimiento. Se procede como parte experimental a la puesta a punto de un m\u00e9todo por cromatograf\u00eda l\u00edquida con detector de fluorescencia para la detecci\u00f3n y cuantificaci\u00f3n de la umbeliferona, escopoletina y 4-metilumbeliferona y su comparaci\u00f3n estad\u00edstica con el m\u00e9todo tradicional de espectrofluorimetr\u00eda. Tras el estudio de las tres cumarinas citadas en rones, brandies, whiskies, vinos olorosos (con sus correspondientes productos de partida) en muestras comerciales de distinta calidad, muestras fraudulentas y su comparaci\u00f3n con testigos suministrados por distintas bodegas y estudio de envejecimiento con virutas de roble y almendra tratadas con calor.
