Teresa Merino Viedma <\/strong><\/h2>\n<p>El amargor que se desarrolla en zumos c\u00edtricos despu\u00e9s de la extracci\u00f3n, es uno de los principales problemas t\u00e9cnicos existentes y no resueltos en la industria alimentaria con un importante impacto econ\u00f3mico negativo.  se han llevado a cabo estudios para el desamargado por medio de biorreactores aplicando t\u00e9cnicas de biolog\u00eda molecular para la modificaci\u00f3n gen\u00e9tica de microorganismos aceptados para su utilizaci\u00f3n en la industria alimentaria, con el fin de que puedan expresar la limonina lactona-d hidrolasa (ldlasa), enzima que metaboliza la limonina, analito responsable dedicho amargor hacia otros compuestos igualmente inocuos pero no amargos.  hemos puesto a punto un m\u00e9todo de detecci\u00f3n y cuantificaci\u00f3n de los limonoides implicados en el amargor retardado y en la cat\u00e1lisis de la ldlasa. El m\u00e9todo desarrollado ha supuesto la posibilidad de cuantificar no s\u00f3lo la limonina existente en un zumo de naranja reci\u00e9n extra\u00eddo, sino tambi\u00e9n su precursor, la lactona a del \u00e1cido limonoico (lal), con lo que se puede determinar con precisi\u00f3n el amargor m\u00e1ximo que puede llegar a tener un zumo.
