los principales aspectos relacionados con la producci\u00f3n de nisina en cultivo sumergido y las posibilidades para su aplicaci\u00f3n a la conservaci\u00f3n en pescado refrigerado.  para ello, inicialmente se desarroll\u00f3 un procedimiento adecuado para la cuantificaci\u00f3n de estos p\u00e9ptidos y se estudiaron las posibles modificaciones del efecto de la bactericina debidas a la presencia en el medio de otros productos metab\u00f3licos de bacterias l\u00e1cticas t\u00edpicamente inhibidores, en concreto del \u00e1cido l\u00e1ctico.  en lo que respecta a la producci\u00f3n, los resultados obtenidos permitieron concluir que:  1) la producci\u00f3n de nisina se asocia a una v\u00eda metab\u00f3lica oxidativa.  2) la velocidad de producci\u00f3n de nisina es proporcional a la pendiente de ca\u00edda de ph, a partir de lo que se propuso una operatoria para la mejora en estas bioproducciones, consistente en imponer al cultivo un perfil escalonado de ph y con alimentaci\u00f3n con glucosa.  3) la triptona y el extracto de levadura parecen tener un papel como fuentes de algunos amino\u00e1cidos esenciales en la bios\u00edntesis de nisina.  por \u00faltimo, los estudios de aplicaci\u00f3n permitieron una aproximaci\u00f3n inicial al sistema, defini\u00e9ndose direcciones suficientemente prometedoras para su desarrollo en un futuro m\u00e1s o menos
