efecto de atm\u00f3sferas  enriquecidas en co2 (20 y 40%) en la microbiota total, enterobacteria, brochothrix thermosphacta, bacterias l\u00e1cticas, en ciertos par\u00e1metros fisicoqu\u00edmicos que se utilizan como par\u00e1metros de calidad, as\u00ed como en la calidad sensorial de merluza, lenguado, salm\u00f3n y at\u00fan blanco.  como conclusi\u00f3n global se aconseja el enriquecimiento de la atm\u00f3sfera con un 20% de co2 para inhibir eficazmente la flora aerobia gram negativa aunque se requieren concentraciones superiores al 40% para inhibir a shewanella putrefaciens.  el envasado del at\u00fan blanco en atm\u00f3sferas de co2\/o2 (40\/60)(v\/v) permite ampliar su vida \u00fatil en refrigeraci\u00f3n mientras que en el caso de merluza, lenguado y salm\u00f3n se recomienda una atm\u00f3sfera de co2 aire (40\/60) (v\/v) con lo que se puede duplicar (lenguado) e incluso triplicar (merluza y salm\u00f3n) su vida \u00fatil en refrigeraci\u00f3n.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos
