Isabel <\/strong><\/h2>\n<p>En este trabajo se ha conseguido producir la bacteriocina pediocina pa-1 en lactococcus lactis empleando los sistemas de expresi\u00f3n de dos bacteriocinas lactoc\u00f3cicas, la nisina y lactococina a. Una de las cepas, l. Lactis fi9265 tiene una productividad depediocina equivalente a la del productor natural pediococcus acidilactici 347, mientras que otra l.Lactis fi9267 es capaz de coproducir dos bacteriocinas de amplio aspectro, la nisina y la pediocina pa-1. La pediocina pa-1 tiene una actividad antimicrobiana particularmente acusada frente a listeria monocytogenes, un microoganismo que despierta particular preocupaci\u00f3n en la industria l\u00e1ctea. sin embargo, los pediococos no est\u00e1n adaptados a los ambientes l\u00e1cteos, por lo que no se pueden emplear como cultivos bioprotectores en dichos alimentos.
