{"id":40238,"date":"1999-01-01T00:00:00","date_gmt":"1999-01-01T00:00:00","guid":{"rendered":"https:\/\/www.deberes.net\/tesis\/sin-categoria\/constituyentes-aromaticos-del-zumo-de-naranja-efecto-del-procesado-industrial\/"},"modified":"1999-01-01T00:00:00","modified_gmt":"1999-01-01T00:00:00","slug":"constituyentes-aromaticos-del-zumo-de-naranja-efecto-del-procesado-industrial","status":"publish","type":"post","link":"https:\/\/www.deberes.net\/tesis\/ciencias-tecnologicas\/constituyentes-aromaticos-del-zumo-de-naranja-efecto-del-procesado-industrial\/","title":{"rendered":"Constituyentes aromaticos del zumo de naranja. efecto del procesado industrial."},"content":{"rendered":"<h2>Tesis doctoral de <strong> Mar\u00eda Jos\u00e9 Jord\u00e1n Bueso <\/strong><\/h2>\n<p>En esta memoria de tesis doctoral se aborda el estudio de la fracci\u00f3n arom\u00e1tica del zumo de naranja, as\u00ed como las posibles alteraciones que pueda sufrir durante el procesado industrial.  el an\u00e1lisis de componentes vol\u00e1tiles totales se realiza mediante la aplicaci\u00f3n de la destilaci\u00f3n-extracci\u00f3n simult\u00e1nea (sde) y microextracci\u00f3n en fase s\u00f3lida (spme). en esta \u00faltima t\u00e9cnica se emplean dos recubrimientos polim\u00e9ricos, uno de naturaleza apolar pdms (polidimetil siloxano) y otro de naturaleza polar pa (poliacrilato). La optimizaci\u00f3n de spme se realiza valorando la influencia de temperatura, concentraci\u00f3n salina, y agitaci\u00f3n de la matriz acuosa.  el estudio de la fracci\u00f3n arom\u00e1tica del zumo de naranja exprimido a mano muestra la elevada eficiencia de la microextracci\u00f3n en fase s\u00f3lida para la determinaci\u00f3n de los componentes vol\u00e1tiles frente a la destilaci\u00f3n-extracci\u00f3n simult\u00e1nea. En el an\u00e1lisis de componentes vol\u00e1tiles totales, treinta y seis componentes son identificados frente a los cuarenta y ocho detectados en espacio de cabeza. Estas diferencias se asocian a las p\u00e9rdidas de los componentes de elevada volatilidad durante la destilaci\u00f3n y posterior concentraci\u00f3n.  el an\u00e1lisis de la fracci\u00f3n arom\u00e1tica presente en el zumo de naranja exprimido a mano y el zumo pasteurizado revela la importancia de la riqueza del zumo en constituyentes de elevada volatilidad. El zumo pasteurizado presenta un perfil arom\u00e1tico pobre en estos componentes y una mayor abundancia en constituyentes caracter\u00edsticos del aceite esencial de la naranja, incorporados al zumo durante el proceso de extracci\u00f3n industrial. Este efecto queda m\u00e1s remarcado cuando se emplea polidimetil siloxano que poliacrilato como recubrimiento polim\u00e9rico.
