Estas estructuras qu\u00edmicas se encuentran restringidas al reino vegetal, constituyendo aproximadamente el 2% del carbono fotosintetizado, y presentando importantes funciones fisiol\u00f3gicas en la planta.  de igual manera presentan propiedades farmacol\u00f3gicas y modificadoras de la percepci\u00f3n del sabor. De manera general los flavonoides presentan actividad antioxidante, antiinflamatoria, son utilizados en el tratamiento de desordenes vasculares y muestran un cierto efecto en la prevenci\u00f3n de ciertos tipos de canceres.  las flavonas glucosiladas diosmina y neodiosmina presentan interesantes propiedades tanto desde el punto de vista farmacol\u00f3gico como desde el de la tecnolog\u00eda de alimentos. El rutin\u00f3sido diosmina tiene propiedades antiinflamatorias y actividad frente a la fragilidad capilar siendo prescrita como diferentes especialidades farmace\u00faticas. Actualmente se obtiene mediante s\u00edntesis qu\u00edmica a partir de la hesperidina encontrandose en los preparados farmac\u00e9uticos con una riqueza del 90%, estando el otro 10% formado por la flavanona hesperidina, y no existiendo una fuente natural para su extracci\u00f3n. El neohesperid\u00f3sido neodiosmina reduce la percepci\u00f3n del sabor amargo causado por determinados compuestos como la limonina en zumos de naranjas del tipo navel. As\u00ed dosis de 40 a 50 ppm aumentan el umbral de percepci\u00f3n del limonoide desde 3-4 ppm a 15 ppm, transformando un zumo con un desagradable sabor amargo en un zumo aceptable.
