{"id":40422,"date":"1999-01-01T00:00:00","date_gmt":"1999-01-01T00:00:00","guid":{"rendered":"https:\/\/www.deberes.net\/tesis\/sin-categoria\/concentracion-de-zumo-de-manzana-por-oi-modelizacion-y-evaluacion-economica-del-proceso\/"},"modified":"1999-01-01T00:00:00","modified_gmt":"1999-01-01T00:00:00","slug":"concentracion-de-zumo-de-manzana-por-oi-modelizacion-y-evaluacion-economica-del-proceso","status":"publish","type":"post","link":"https:\/\/www.deberes.net\/tesis\/ingenieria-y-tecnologia-quimicas\/concentracion-de-zumo-de-manzana-por-oi-modelizacion-y-evaluacion-economica-del-proceso\/","title":{"rendered":"Concentracion de zumo de manzana por oi: modelizacion y evaluacion economica del proceso."},"content":{"rendered":"<h2>Tesis doctoral de <strong> Silvia Alvarez Blanco <\/strong><\/h2>\n<p>El objetivo principal del presente trabajo ha sido desarrollar un modelo matem\u00e1tico que permita predecir la densidad de flujo de permeado y la retenci\u00f3n de los aromas del zumo de manzana en el proceso de concentraci\u00f3n por \u00f3smosis inversa, en funci\u00f3n de las condiciones de operaci\u00f3n y de las caracter\u00edsticas fisicoqu\u00edmicas del soluto. para desarrollar el modelo, as\u00ed como para obtener datos importantes para la aplicaci\u00f3n del mismo, se utilizaron, en las primera etapas del trabajo, disoluciones acuosas artificiales de aromas, tanto individuales como mezclas de los mismos.  el modelo se ha aplicado a la concentraci\u00f3n por \u00f3smosis inversa de disoluciones acuosas artificiales de aromas y az\u00facares (glucosa). El modelo se ha utilizado, tambi\u00e9n, para predecir los resultados obtenidos en la concentraci\u00f3n de zumo natural de manzana tanto a escala de laboratorio como de planta piloto. los ensayos en planta piloto fueron llevados a cabo en la industria valle, ballina y fern\u00e1ndez, s.A., De villaviciosa (principado de asturias).  finalmente, se ha realizado una evaluaci\u00f3n econ\u00f3mica del proceso de elaboraci\u00f3n de zumo de manzana concentrado mediante oi y se ha comparado el resultado con el equivalente de los procesos convencionales. Estos resultados permiten estudiar la posibilidad de la implantaci\u00f3n de dicho proceso a escala industrial.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de la tesis doctoral
