Se han comparado las ventajas e inconvenientes de cada una de los procesos citados, comparando especialmente la evolucion de la ganancia de solutos y de la perdida de agua, con el tiempo. Con la metodolog\u00eda utilizada y los calculos y resultados obtenidos, se concluye que con la deshidratacion osmotica a vacio se obtiene una mayor perdida de agua y de peso y una mayor ganancia de solidos solubles comparados con lo que se obtiene en condiciones atmosfericas y que trabajando con una deshidratacion por pulsos se obtiene mayor aumento de solidos solubles comparado con lo que se obtiene en condiciones a vacio.  asi mismo, se analiza la cinetica de este tipo de deshidratacion por medio de la ecuacion derivada de la ley de fick. Esto ha permitido estudiar los mecanismos de transferencia de materia presentes durante la deshidratacion osmotica tanto atmosferica como a vacio y por pulsos, osmosis, difusion y mecanismo
