Lo mismo ocurre con los contenidos de elementos minerales que oscilan en un amplio intervalo. El cadmio no es detectable en algunas de las muestras analizadas.  se observa una falta de concordancia en los contenidos de nutrientes analizados, entre los valores hallados y los indicados en las tablas de composici\u00f3n de los alimentos.  en algunos derivados c\u00e1rnicos se obtienen buenas correlaciones entre los contenidos de: cinc y proteina, cins y cobre y los contaminantes cadmio y
