La alternativa planteada en este trabajo hace uso de las t\u00e9cnicas de biolog\u00eda molecular para construir cepas de levadura de panader\u00eda capaces de producir enzimas requeridas en el proceso. Concretamente, se han expresado en levadura los cdnas correspondientes a las endoxilanasas x22, x24 y x34 de aspergillus nidulans 4 la alfa-l-arabinofuranosidasa b de a. Niger. entre las lipasas, se han expresado en levadura los genes lip1 y lip2 de geotrichum sp. tambi\u00e9n se han evaluado los efectos sin\u00e9rgicos derivados de la coexpresi\u00f3n de los cdnas de la alfa-amilasa de a.Oryzae y la xilanasa x24.
