Se realiza un diagn\u00f3stico del sector observ\u00e1ndose que los procesos no se encontraban bajo control y que era primordial implantar sistema de control de calidad basados en el arcpc. De este modo, se redacta un \u00abmodelo de sistema de autocontrol de la calidad del queso de oveja elaborado a partir de leche cruda\u00bb para facilitar los procesos de mejora.  paralelamente se realiz\u00f3 una investigaci\u00f3n con el objeto de conocer las fuentes de nitratos y nitritos en los quesos y la dosis m\u00e1xima de utilizaci\u00f3n de los nitratos como aditivo. se confirma que \u00e9ste representa el par\u00e1metro sanitario con mayor incidencia de valores fuera de norma en los quesos y se determina que la principal causa de aparici\u00f3n de estas sustancias es su utilizaci\u00f3n como aditivo durante la elaboraci\u00f3n. Se recomienda una dosis m\u00e1xima de utilizaci\u00f3n del aditivo de 200mg\/1; dosis que mejora el aspecto de los quesos y que no supone un peligro sanitario.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos
