Dolors <\/strong><\/h2>\n<p>Durante cuatro a\u00f1adas consecutivas, desde 1993 hasta 1996, se tomaron muestras de cepas de levadura a partir de mostos del pened\u00e9s en fermentaci\u00f3n espont\u00e1nea. estos muestreos se realizaron a partir de mostos provenientes de las tres vareiedades de uva aut\u00f3ctona del pened\u00e9s, \u00e9s decir, macabeu, xarel-lo y parellada. Las muestras se tomaron tambi\u00e9n a diferentes densidades de fermentaci\u00f3n y de diferentes puntos de los dip\u00f3sitos.  las depas de levadura aisladas de mostos del pened\u00e9s en fermentaci\u00f3n espont\u00e1nea pertenecen, en su mayor\u00eda, al g\u00e9nero saccharomyces y sus marcadors moleculares mostraron un nivel elevadod e variabilidad gen\u00e9tica. La m\u00e1xima variabilidad se present\u00f3 en el cariotipo, seguido del patr\u00f3n de restricci\u00f3n del adn mitocondrial (adnmt) y por \u00faltimo del patr\u00f3n de prote\u00ednas totales. El patr\u00f3n de adnmt mostr\u00f3 su m\u00e1xima variabilidad usando el enzima de restricci\u00f3n hina. El patr\u00f3n de prote\u00ednas totales. El patr\u00f3n de adnmt de las cepas extraidas al azar del mosto respecto a las a\u00f1adas, las variedades de uva y las densidades y puntos de muestreo mostr\u00f3 que la a\u00f1ada es el par\u00e1metro que genera m\u00e1s variabilidad de patrones de adnmt y la densidad y el punto de muestreo dieron distribuciones muy similares.  se desarrollaron diferentes sistemas de selecci\u00f3n de cepas de levadura v\u00e1lidas para realizar la segunda fermentaci\u00f3n del cava. entre los sistemas desarrollados, el que di\u00f3 mejores resultados fu\u00e9 aquel que combin\u00f3 el crecimiento, la viabilidad y la capacidad fermentativa en medios v\u00ednicos -naturales o sint\u00e9ticos- en unas condiciones fisicoqu\u00edmicas restrictivas para las levaduras y pr\u00f3ximas a las de la segunda fermentaci\u00f3n del cava. Los grupos de cepas obtenidos a partir de cada uno de estos sistemas de selecci\u00f3n mostraron fenotipos y distribuciones de patrones de adnmt espec\u00edficos y diferentes de los de la poblaci\u00f3n inicial extraida al azar del mosto.
