t\u00e9cnicas m\u00e1s empleadas en la actualidad para la conservaci\u00f3n de los alimentos. los expertos en el tema, concluyen que bajo dosis de radiaci\u00f3n gamma, que no superen los 10kgy, con energ\u00eda asociada menor de 5 mev, no existen riesgos nutricionales a la hora de la ingesti\u00f3n. por eso es necesario desarrollar t\u00e9cnias que permitan diferenciar un alimento irradiado de uno que no lo est\u00e9 y que permitan determinar la dosis de radiaci\u00f3n ionizante gamma previa suministrada. en este trabajo, se desarrolla un nuevo m\u00e9todo de c\u00e1lculo de la dosis retrospectiva, gracias al an\u00e1lisis de las se\u00f1ales de ternoluminiscencia (tl), procedente de la fracci\u00f3n polimineral que queda adherida a los alimentos.  adem\u00e1s se estudian los aspectos luminiscentes de todas las fracciones monominerales que forman el polimineral encontrado en alimentos: cuarzo, feldespatos, calcitas y minerales de la arcilla. se ha observado que de entre todas ellas, la calcita, es el mineral que mejor comportamiento dosim\u00e9trico presenta por su resistencia al blanqueamiento \u00f3ptico, t\u00e9rmico y respuesta
