Teresa <\/strong><\/h2>\n<p>El aroma de las manzanas, que forma parte del \u00abflavor\u00bb, esta definido por el conjunto de \u00e9steres, alcoholes, aldeh\u00eddos, \u00e1cidos carbox\u00edlicos, terpenos, cetonas, etc., sintetizados generalmente durante la fase de maduraci\u00f3n climat\u00e9rica. Del conjunto de los componentes arom\u00e1ticos, s\u00f3lo unos pocos son los responsables del aroma caracter\u00edstico de cada variedad de manzana debido a su bajo umbral de percepci\u00f3n olfativa.  durante dos campa\u00f1as frut\u00edcolas consecutivas, se recolectaron manzanas de las variedades starking delicious, golden delicious y granny smith en estado de madurez comercial. Tras la recolecci\u00f3n, las manzanas se almacenaron a 1 grado c y 92-94% hr, en condiciones de fr\u00edo normal y en tres tipos de atm\u00f3sfera controlada: est\u00e1ndar con 3% o2 y de co2 (ac), con bajo ox\u00edgeno con 2% \/2 y de co2 (lo) y con muy bajo ox\u00edgeno con 1% o2 y de co2 (ulo) para estudiar el efecto del almacenamiento frigor\u00edfico sobre la composici\u00f3n arom\u00e1tica.  en el momento de la recolecci\u00f3n y tras el almacenamiento frigor\u00edfico se analizaron los compuestos vol\u00e1tiles arom\u00e1ticos. La extracci\u00f3n se realiz\u00f3 por el m\u00e9todo de espadio de cabeza din\u00e1mico. La identificaci\u00f3n y cuantificaci\u00f3n se realiz\u00f3 por cromatograf\u00eda de gases y la confirmaci\u00f3n se llev\u00f3 a cabo por espectrometr\u00eda de masas. Tambi\u00e9n se determinaron los par\u00e1metros de calidad est\u00e1ndar y la producci\u00f3n de etileno y de di\u00f3xido de carbono. El an\u00e1lisis sensorial se realiz\u00f3 mediante un test de preferencia despu\u00e9s de la frigoconservaci\u00f3n. el estudio de la composici\u00f3n arom\u00e1tica tras el almacenamiento se realiz\u00f3 a los 3, 5 y 7 meses de frigoconservaci\u00f3n, analiz\u00e1ndose las muestras de manzanas tras 1,5 y 10 d\u00edas de \u00abshelf-life\u00bb a 20 grados c.  en la recolecci\u00f3n, los \u00e9steres fueron los componentes arom\u00e1ticos predominantes en las tres variedades de manzana estudiadas.
