El juego de ca\u00f1a (guarapo) se caracteriza por su alto contenido en sacarosa, el contenido de vitaminas se centra entiamina y riboflavina y en el caso de los minerales los que se encuentran en mayor proporci\u00f3n son: el potasio, f\u00f3sforo y calcio.  las enzimas responsables del deterioro son la peroxidasa y la polifenoloxidasa.  se obtuvo un modelo de regresi\u00f3n que permite predecir la temperatura de esterilizaci\u00f3n del guarapo conociendo su ph.
