{"id":42680,"date":"1999-01-02T00:00:00","date_gmt":"1999-01-02T00:00:00","guid":{"rendered":"https:\/\/www.deberes.net\/tesis\/sin-categoria\/desarrollo-de-un-alimento-completo-propio-para-deportistas\/"},"modified":"1999-01-02T00:00:00","modified_gmt":"1999-01-02T00:00:00","slug":"desarrollo-de-un-alimento-completo-propio-para-deportistas","status":"publish","type":"post","link":"https:\/\/www.deberes.net\/tesis\/ciencias-tecnologicas\/desarrollo-de-un-alimento-completo-propio-para-deportistas\/","title":{"rendered":"Desarrollo de un alimento completo propio para deportistas."},"content":{"rendered":"<h2>Tesis doctoral de <strong> Lourdes Vald\u00e9s Fraga <\/strong><\/h2>\n<p>El objetivo del presente trabajo fue desarrollar un producto tipo alimento completo, propio para reg\u00edmenes de mantensi\u00f3n o p\u00e9rdida del peso corporal, definiendo su tecnolog\u00eda de elaboraci\u00f3n y sus caracter\u00edsticas nutricionales, acordes con las exigencias planteadas por el instituto de medicina deportiva.  se emple\u00f3 para la ejecuci\u00f3n del trabajo la metodolog\u00eda para el desarrollo de alimentos para reg\u00edmenes especiales, dise\u00f1ada en el iiia, con optimizaci\u00f3n de la calidad de la prote\u00edna del alimento mediante un sistema automatizado de formulaci\u00f3n de alimentos y aplicando la tecnolog\u00eda de elaboraci\u00f3n de mezcla f\u00edsica. El producto envasado en envases de hojalata con sello met\u00e1lico y atm\u00f3sfera de nitr\u00f3geno fue sometido a un estudio de durabilidad, a dos temperaturas de almacenamiento, ambiente y refrigeraci\u00f3n, determin\u00e1ndose la cin\u00e9tica de degradaci\u00f3n de las vitaminas b1 y c con el tiempo, mediante una ecuaci\u00f3n lineal de orden cero y un an\u00e1lisis de regresi\u00f3n simple. Se determin\u00f3 el tiempo de mezclado a trav\u00e9s del estudio de la constancia en el tiempo de las concentraciones de dos componenetes minoritarios, el hierro y la vitamina b1. Se evalu\u00f3 el alimento listo para la ingesta de un grupo de 15 atletas del sexo femenino pertenecientes a deportes de arte y coordianci\u00f3n.  se defini\u00f3 la formulaci\u00f3n del producto, su aporte nutricional, su factibilidad de elaboraci\u00f3n, su forma de producci\u00f3n y envase, as\u00ed como se corrobor\u00f3 que la vida de anaquel del producto se ve limitada por el contenido de vitaminas, fundamentalmente b1 y c sin afectaciones en macro nutrientes, minerales y calidad de la prote\u00edna.
