{"id":42681,"date":"1999-01-02T00:00:00","date_gmt":"1999-01-02T00:00:00","guid":{"rendered":"https:\/\/www.deberes.net\/tesis\/sin-categoria\/conservacion-de-pulpas-de-frutas-por-metodos-combinados\/"},"modified":"1999-01-02T00:00:00","modified_gmt":"1999-01-02T00:00:00","slug":"conservacion-de-pulpas-de-frutas-por-metodos-combinados","status":"publish","type":"post","link":"https:\/\/www.deberes.net\/tesis\/ciencias-tecnologicas\/conservacion-de-pulpas-de-frutas-por-metodos-combinados\/","title":{"rendered":"Conservaci\u00f3n de pulpas de frutas por m\u00e9todos combinados."},"content":{"rendered":"<h2>Tesis doctoral de <strong> Ileana Vicente Armenteros <\/strong><\/h2>\n<p>Debido a la necesidad de conservar pulpas de guayaba, mango y pl\u00e1tano en los picos de cosecha sin emplear los envases de hojalata tradicionales en la industria cubana; se aplic\u00f3 la teor\u00eda de los obst\u00e1culos para su conservaci\u00f3n en grandes tanques y posterior utilizaci\u00f3n en la elaboraci\u00f3n de jugos, cremas y otros productos derivados.  los obst\u00e1culos empleados fueron: reducci\u00f3n de la actividadde agua mediante adici\u00f3n de diferentes niveles de sacarosa; disminuci\u00f3n de ph empleando \u00e1cido c\u00edtrico o fosf\u00f3rico de acuerdo a las caracteristicas sensoriales de la fruta; y diferentes niveles de preservante de acuerdo al destino del producto y el tiempo de almacenamiento considerado.  para ello se hicieron estudios de reto microbiano para definir el perservante y los niveles a emplear inoculando las pulpas con una levadura osmof\u00edlica recomendada en la literatura consultada, la saccharomyces bailli: el sorbato de potasio fue m\u00e1s efectivo que el bezoato de sodio. Se hizo un dise\u00f1o factorial 2 con los factores escogidos, se entren\u00f3 un grupo de jueces para evaluar la calidad sensorial y se defini\u00f3 el comportamiento de las caracter\u00edsticas nutricionales reol\u00f3gicas y de calidad, en el almacenamiento.  las combinaciones exitosas ya se encuentran aplicadas en la industria con el consiguiente beneficio
