Carmen <\/strong><\/h2>\n<p>En el proceso de fermentacion que experimentan las aceitunas negras al natural en salmuera  se desarrolla una flora microbiana compuesta por bacilos gram-negativos no esporulados  levaduras y  en determinadas circunstancias bacterias lacticas. La fermentacion estudiada en las variedades leclin  hojiblanca y verdial indica que de los microorganismos antes citados  las levaduras son los responsables de la fermentacion. El estudio taxonomico realizado a 729 cepas de levaduras indica que las especies mas representativas del proceso son en primer lugar sanharomyces oleaginosus y hansenula anomala  tanto por su frecuencia de especies como por la de muestras en que se encontraron.
