Asimismo se estudia la influencia de los diferentes zumos semielaborados conservados mediante las diferentes tecnicas ensayadas  en la calidad de los productos terminados: zumos pasterizados y graseados. Se presta una especial atencion al comportamiento de los componentes aromaticos en los diferentes procesos ensayados. Se llega a la conclusion general de que en las condiciones optimas encontradas es posible obtener zumo de uva de excelente calidad a partir de las variedades de uva
