Gregoria <\/strong><\/h2>\n<p>Se estudia el valor nutritivo de la proteina de mejillon y de su concentrado proteico  asi como la influencia que sobre aquel pueda tener la contaminacion por petroleo y las variaciones estacionales. Asimismo se estudia la variacion en los niveles de contaminacion por organoclorados  mercurio y bacterias como consecuencia del proceso de obtencion de dicho concentrado. Se concluye que la utilizacion nutritiva de la proteina de mejillon y de su concentrado proteico es muy buena en cualquier mes del a\u00f1o  presentando valores minimos en las epocas coincidentes con el desove. El concentrado proteico de mejillon mejora significativamente la utilizacion nutritiva de la proteina de mejillon  en todos los casos estudiadoos. La contaminacion por petroleo no afecto al valor nutritivo de la proteina.
