Frescos  liofilizados y en conservas usando la oscilopolarografia diferencial de monobarrido lineal de potencial. Tambien se analizo cinc por su asociacion al cadmio. Se manejaron otras variables tales como liofilizado  congelado  procesamientos (coccioon esterilizacion  partes anatomicas  etc.). La revision de las muestras (unas 700 diferentes) confirma que las concentraciones maximas de plomo  cadmio y cinc  estan por debajo de los limites legales de espa\u00f1a y otros
