tesis de referencia se hace un estudio de las alteraciones que sufren las materias del orujo graso durante el almacenamiento y de los fenomenos fisicos y quimicos que ocurren durante estas alteraciones  asi como un estudio de la flora microbiologica responsable de gran parte de dichas alteraciones; este estudio comprende principalmente las variaciones de acidez  del contenido de humedad y de la composicion de los acidos grasos de la grasa contenida en el orujo  asi como la deteccion y determinacion de unos metabolitos altamente toxicos -las aflatoxinas-  en los orujos  en las
