En la primera parte se analizan y se cuantifican reologicamente las caracteristicas del flujo y en la segunda  se establecen relaciones entre estas y la composicion quimica y la estructura fisica del producto. Los resultados permiten afirmar que el flujo del pure de albaricoque es tixotropico y que una vez eliminado el efecto de este caracter  es seudoplastico con umbral de fluencia. Las caracteristicas de la fase dispersante influyen en los parametros reologicos pero el tipo de flujo esta definido  esencialmente por las caracteristicas de la fase
