Se estudia en primer lugar la influencia de las variables de liofilizacion sobre el tiempo y la velocidad de secado por liofilizacion. Posteriormente  se estudia la influencia del tipo de leche cuajada  las condiciones de liofilizacion y la temperatura de almacenamiento sobre las isotermas de sorcion de sorcion de leche cuajada liofilizada. Se correlacionan los resultados experimentales segun diversos modelos de isotermas teoricas no empiricas  de forma que  ademas de encontrar expresiones para las isotermas de sorcion  se pueden calcular los contenidos de humedad optimos para el almacenamiento  la superficie especifica y calor diferencial de adsorcion. Porultimo se hace un estudio de las variaciones de la composicion y caracteristicas organolepticas de la leche cuajada liofilizada en funcion del tiempo  temperatura y humedad residual de
