La alteracion del aceite se ha estudiado determinando periodicamente los indices fisico-quimicos de calidad mas apropiados y significativos y las caracteristicas organolepticas. Se ha encontrado que los indices evolucionan con el tiempo ajustandose generalmente a ecuaciones exponenciales y se ha podido demostrar la importancia que sobre la conservacion del aceite tienen las
