Se han realizado pruebas enologicas sobre las bacterias lacticas aisladas para ver su accion y condiciones de desarrollo sobre distintos componentes del vino. Se han estudiado metodos para combatir a estos microorganismos y a las levaduras del genero brettanomyces  el mas frecuente en estos vinos alterados.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de
