Respecto a las caracteristicas fisicas se determina la homogeneidad y semejanza existente entre las distintas muestras     en funcion de diferentes parametros.  en la composicion quimica se estudian los diferentes grupos: agua   lipidos  fraccio n proteica  hidratos de carbono y minerales.  finalmente se estudia la influencia del almacenamiento sobre la calidad de la almendra y de sus
