Conscientes de la gran importancia del tema de los acidos el objetivo de la presente tesis ha sido: 1) puesta a punto de un metodo gas-cromatografico que nos permita analizar conjuntamente el mayor numero posible de acidos organicos fijos. 2) analisis cualitativo y cuantitativo de acidos organicos fijos en el curso de maduracion de uvas de la vinificacion y en el vino ya elaborado. El metodo analitico empleado ha sido el estudio por cromatografia de gases previa separacion por cromatografia de intercambio ionico y posterior fromacion de los trimetil-silil derivados de los acidos organicos fijos. Los resultados obtenidos permiten afirmar que este metodo analitico es reproducible en una amplia extension cuantitativa  de aplicacion al analisis de acidos organicos fijos de mostos y
