Se ha hecho una caracterizacion del producto fresco. Se ha determinado el valor de la temperatura del punto de fusion incipiente. Se ha estudiado la influencia de las distintas variables sobre la cinetica de secado y se han realizado ensayos de reconstitucion y almacenamiento para poder establecer en cada caso las condiciones operativas idoneas para el proceso industrial de la conservacion de dicho producto mediante la tecnica de la liofilizacion.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de la tesis doctoral
