Se han analizado trescienta muestras. Sobre cada lote de yogures (cincuenta muestras de cada variedad y marca) se realizaron cinco controles:  inicial  a los 10 dias  a los 20  alos 30 y a los 40dias de almacenamiento a 7c. En cada contorl se analizaron diez muestras efectuandose las determinaciones siguientes: a) recuento de la microflora esencial del yogur siguiento el metodo oficial frances (1978) empleandose el agar m17 (terzaghi y sandine  1975) en el caso del str. Thermophilus y el agar mrs (de man y col.  1960) en el del lb. Bulgaricus.-B) investigacion mediante tecnicas de cultivo  de la microflora contaminante del yogur (coliforme y e.Coli  enterococos sicrotrofos  levaduras y mhos  estafilococos patogenos cl. Perfrigens y salmonelas).-C) se dertermino asi mismo el ph y la acidez titulable  expresada en acido lactico.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de la tesis doctoral
