Se ha estudiado la calidad microbiologica y sus riesgos sanitarios  se han aportado conocimientos sobre las alteraciones producidas en estos productos carnicos y sus posibles causas determinantes  se ha establecido una fecha limite de vida comercial en relacion con la temperatura de almacenamiento  se han estudiado las interrelaciones entre los parametros controlados  asi como su evolucion durante el almacenamiento. Se propone finalmente el limite microbiologico de las salchichas envasadas al vacio  que pueda servir de base a la futura legislacion espa\u00f1ola al respecto.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos
