Se realiza una caracterizacion del color de los vinos y brandies de jerez mediante los sistemas cie31 y cielab 76, empleando el metodo de 391 ordenadas ponderadas, comparando la bondad del metodo respecto al metodo oficial. Tambien se propone un metodo rapido de determinacion de color en vinos y brandies que permite obtener la coordenada cromatica, mediante relacion lineal sencilla, a partir de la medida de transmitancia a determinada longitud de onda, que denominamos \u00aboptima\u00bb.  este metodo resulta valido ademas para vinos blancos de mesa, cognac, whiskies, vinagres de jerez, etc.  se estudia el proceso de decoloracion en vinos finos mediante la variacion de sus coordenadas cromaticas; estableciendo determinada cinetica de adsorcion de los componentes coloreados sobre el
