Lourdes <\/strong><\/h2>\n<p>Se realiza un estudio de las condiciones optimas de maceracion pelicular prefermentativa con objeto de aumentar el caracter afrutado de los vinos jovenes de mesa y el aumento de los factores de supervivencia de las levaduras en las fermentaciones de los vinos finos, obtenidos a partir de la variedad \u00abpedro ximenez\u00bb cultivada en la zona de d.O. Montilla-moriles. Mediante el uso de un indice definido como (epsilon terpenos+eugenol +epsilon esteres superiores\/epsilon alcoholes superiores)x100 se obtiene la condicion optima de maceracion (10 grados c- 24h) para la obtencion de vinos de mesa con un mayor caracter afrutado, tambien estas condiciones resultan las mas adecuadas para aumentar los factores de supervivencia en las fermentaciones destinadas a obtener vinos finos.
