calidad"},"content":{"rendered":"<h2>Tesis doctoral de <strong> Sonia Ventanas Canillas <\/strong><\/h2>\n<p>Los objetivos de la presente tesis doctoral fueron:     1,- conocer la influencia de la gen\u00e9tica (raza ib\u00e9rica frente a cruzados con duroc y cruzados de madre duroc frente a cruzados de madre ib\u00e9rica) y la alimentaci\u00f3n durante la fase de cebo (piensos comerciales, piensos enriquecidos con girasol alto oleico y suplementados con alfa-tocoferol y montanera) en aspectos relacionados con la calidad de la materia prima (longuissimus dorsi) y del lomo curado, principalmente aquellos determinados por el contenido y caracter\u00edsticas de la grasa intramuscular.     2,- evaluar la utilidad de diferentes m\u00e9todos alternativos y\/o complementarios al m\u00e9todo oficial establecido por la norma de calidad para la clasificaci\u00f3n de la materia prima en funci\u00f3n de la alimentaci\u00f3n recibida por los animales durante la fase de cebo.     3,- establecer la influencia de la gen\u00e9tica y la alimentaci\u00f3n obre la oxidaci\u00f3n lip\u00eddica y proteica del m\u00fasculo longissimus dorsi y del lomo curado.     4,- conocer el efecto de la gen\u00e9tica y la alimentaci\u00f3n, as\u00ed como el contenido en grasa intramuscular, tienen sobre las caracter\u00edsticas del lomo curado de cerdo ib\u00e9rico y sobre la preferencia de los consumidores pro este producto.     5,- evaluar la formaci\u00f3n de compuestos vol\u00e1tiles derivado de la degradaci\u00f3n de strecker en sistemas modelo que incluyan fosfol\u00edpidos del m\u00fasculo longissimus doris de cerdo ib\u00e9ricos en condiciones similares a las de maduraci\u00f3n de un producto c\u00e1rnico y en ausencia de microorganismos.     6,- conocer la influencia del contenido en gim sobre la formaci\u00f3n y sobre la din\u00e1mica de liberaci\u00f3n de los compuestos vol\u00e1tiles durante el per\u00edodo de maduraci\u00f3n del lomo curado de cerdo ib\u00e9rico.     7,- conocer el efecto de la gen\u00e9tica y de la alimentaci\u00f3n en el perfil de compuestos vol\u00e1tiles de lomos curados de cerdos ib\u00e9ricos sin adobo.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos
