Se han analizado noventa muestras de salchich\u00f3n agrupadas en seis lotes, uno control y cinco inoculados con salmonella typhimurium, escherichia coli o157:h7, listeria monocytogenes, staphyulococcus aureus y clostridium perfringens, respectivamente. Las determinaciones microbiol\u00f3gicas se llevaron a cabo en producto fresco, semicurado y curado. el bactometer proporcion\u00f3 resultados con mayor rapidez a medida que aumentaba el nivel de contaminaci\u00f3n o la poblaci\u00f3n microbiana de la muestra. la impedancimetr\u00eda ha demostrado ser m\u00e1s eficiente que los m\u00e9todos tradicionales de an\u00e1lisis, constituyendo su principal ventaja la reducci\u00f3n de tiempo (entre 46 y 31 horas). los resultados obtenidos, nos permiten considerar adecuada la utilizaci\u00f3n de la medida de la impedancia (bactometer) tanto para el control de la biota contaminante como para su aplicaci\u00f3n en el control de la actividad de la biota \u00e1cido l\u00e1ctica en los procesos de maduraci\u00f3n de embutidos tipo salchich\u00f3n. mediante el sistema vida y la pcr se constat\u00f3 la ausencia de microorganismos pat\u00f3genos y sus enteriotoxinas en el lote control. Por el contrario, en los lotes inoculados con dichos p\u00e1togenos los resultados fueron positivos. El nivel de conciencia de ambas t\u00e9cnicas fue del 100%, evidenci\u00e1ndose la escasa o nula influencia del proceso de maduraci\u00f3n sobre los pat\u00f3genos ensayados. los resultados obtenidos permiten considerar al sistema vidas y la pcr como una alternativa v\u00e1lida para la detecci\u00f3n r\u00e1pida de pat\u00f3genos en embutidos tipo salchich\u00f3n.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos
